  • 1/2 cup cottage cheese Use full-fat for a creamier texture.
  • 1 cup rolled oats Can use quick oats but texture will differ.
  • 1/2 cup peanut butter
  • 2 tablespoons honey or maple syrup Honey can be substituted with maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips Optional.
  • 1/4 teaspoon cinnamon Optional.
  • Pinch salt Optional.

Method
 

Preparation
  1. In a mixing bowl or food processor, combine cottage cheese, peanut butter, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
  2. Stir in rolled oats, cinnamon, salt, and mini chocolate chips until well incorporated.
  3. Cover and refrigerate for 20 to 30 minutes.
  4. Scoop out about 1 tablespoon of dough and roll into balls.

Notes

Serve bites in a small porcelain dish or on a linen napkin. Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months. For even bites, use a small cookie scoop and wet your palms lightly.
