- In a mixing bowl or food processor, combine cottage cheese, peanut butter, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
- Stir in rolled oats, cinnamon, salt, and mini chocolate chips until well incorporated.
- Cover and refrigerate for 20 to 30 minutes.
- Scoop out about 1 tablespoon of dough and roll into balls.
Notes
Serve bites in a small porcelain dish or on a linen napkin. Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months. For even bites, use a small cookie scoop and wet your palms lightly.
