- In a food processor, combine dates, pecans, cocoa powder, shredded coconut, coconut oil, vanilla extract, and salt.
- Pulse until the mixture is well combined and sticky.
- Roll the mixture into small balls, about 1 tablespoon each.
- Roll each ball in the extra shredded coconut to coat.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes before serving.
Notes
Serve these bites slightly chilled for optimal texture. They can be stored in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze separated with parchment and thaw in the refrigerator when needed.
