- In a medium saucepan over medium heat, combine the sugar, cocoa powder, milk, and butter. Stir gently until blended and the mixture begins to boil.
- Once boiling for about two minutes, take it off the heat and mix in the vanilla extract and a pinch of salt.
- Fold in the quick-cooking oats until they are well coated.
- Drop spoonfuls of the mixture onto wax paper or parchment, giving them space to breathe.
- Allow to cool at room temperature until set, then enjoy!
Notes
Store in an airtight container at room temperature for up to a week, or freeze for up to three months. For chewier cookies, allow them to cool for a slightly shorter time.
