Ingredients
  

Cookie Base
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup salted butter Use unsalted butter if preferred.
  • 3 cups quick-cooking oats Can substitute with old-fashioned oats.
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine the sugar, cocoa powder, milk, and butter. Stir gently until blended and the mixture begins to boil.
  2. Once boiling for about two minutes, take it off the heat and mix in the vanilla extract and a pinch of salt.
  3. Fold in the quick-cooking oats until they are well coated.
  4. Drop spoonfuls of the mixture onto wax paper or parchment, giving them space to breathe.
  5. Allow to cool at room temperature until set, then enjoy!

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to three months. For chewier cookies, allow them to cool for a slightly shorter time.
