Ingredients
  

For the Coconut Layer
  • 3 cups unsweetened coconut shreds or flakes Pulse in a food processor if coarse.
  • 1 cup coconut oil, melted Ensure it's fully melted before mixing.
  • 1-2 cups natural sweetener of your choice (maple syrup, honey, or a granular keto sweetener) Adjust based on desired sweetness.
For the Chocolate Layer
  • 1-2 cups unsweetened or keto chocolate chips Choose according to your preference.

Preparation
  1. Line an 8-inch square baking pan with wax paper or parchment paper and set aside.
  2. In a large mixing bowl, add coconut flakes, melted coconut oil, and sweetener. Mix very well.
  3. Pour the coconut mixture into the prepared pan and press firmly to form a tightly packed layer.
  4. Put in the freezer while preparing the chocolate layer.
Chocolate Layer
  1. Melt chocolate chips using the double boiler method or microwave in 15-second increments, stirring in between.
  2. Pour melted chocolate over the coconut layer and smooth into an even layer with a rubber or silicone spatula.
  3. Sprinkle shredded coconut on top of the chocolate layer.
  4. Return to the freezer for 1 to 2 hours to firm up.
  5. Slice into bars using a serrated knife before serving.

Notes

Keep bars in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze in a single layer then stack with parchment between layers for up to 3 months.
