Preparation
  1. Combine chia seeds, almond milk, maple syrup, shredded coconut, lime zest, lime juice, vanilla extract, and a pinch of salt in a mixing bowl.
  2. Whisk well to ensure there are no clumps.
  3. Let the mixture sit for about 10 minutes, then stir again to break up any clumps.
  4. Pour the mixture into a lined baking dish and spread it out evenly with a spatula.
  5. Chill for 240–360 minutes or overnight until firm.
  6. Once set, cut into bars and serve chilled.

Notes

Serve chilled on a thin plate, garnished with lime zest, toasted coconut, or mint. Store in the refrigerator for up to 5 days or freeze for up to one month.
