  • 2 cups powdered sugar (plus extra for coating) For coating, use extra powdered sugar as needed.
  • 4 ounces softened cream cheese Ensure cream cheese is softened for easy mixing.
  • 1.5 to 2 cups chopped pecans Reserve some for coating the log.

Preparation
  1. In a large mixing bowl, place the softened cream cheese.
  2. Gradually add the powdered sugar while mixing until smooth and thick.
  3. Fold in one cup of the chopped pecans until fully combined.
Shaping
  1. Sprinkle remaining chopped pecans on a clean work surface.
  2. Shape the mixture into a log and press pecans onto the surface.
  3. Wrap in plastic wrap and refrigerate for at least 2 hours.
Serving
  1. Slice the log into circular pieces and serve on a dessert plate.

Notes

Serve with tea or coffee, perfect for gatherings. Store any leftovers in plastic wrap or an airtight container in the fridge for up to a week.
