Ingredients
  

For the filling
  • 2 cups diced apples A mix of Granny Smith and Honeycrisp is recommended.
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
For the crust
  • 1 package refrigerated pie crusts Homemade crust can also be used.
For the egg wash
  • 1 tablespoon milk For the egg wash

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the diced apples, sugar, cinnamon, and lemon juice.
  3. Roll out the pie crusts and cut them into circles that fit snugly in the muffin tin.
  4. Gently place the crusts into the muffin tin cups.
  5. Fill each crust with the apple mixture.
  6. Cut out small circles or strips from the remaining crust for topping and place them atop the apples.
  7. Beat the egg and milk together, then brush over the crusts.
Baking
  1. Bake for 20-25 minutes until golden brown.
  2. Let cool before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the fridge for up to three days.
