  • ½ tbsp fresh lemon juice Fresh is best for flavor.
  • ½ tsp lemon zest For extra bold lemon flavor.
  • ¼ tsp vanilla extract
  • 1 large egg yolk For richness and moisture.

Method
 

Preparation
  1. In a microwave-safe mug, whisk together flour, sugar, baking powder, and salt.
  2. Stir in melted butter, milk, lemon juice, lemon zest, vanilla extract, and egg yolk. Mix until smooth.
Cooking
  1. Heat in the microwave for 50-60 seconds until the top looks set but still slightly glossy. Start with 50 seconds and add 10-second increments if needed.
  2. Let it cool for a minute before eating.

Notes

Serve warm with a scoop of ice cream, lemon curd, or a dusting of powdered sugar for a cozy feel. Store leftovers covered in plastic wrap or in an airtight container in the refrigerator for up to 2 days. Reheat gently in the microwave for 10-15 seconds.
