Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a saucepan, combine fresh cranberries with sugar. Cook over medium heat, stirring gently until the berries begin to pop.
Mixing the batter
- In a bowl, cream together softened butter, brown sugar, eggs, and vanilla extract until light and fluffy.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon.
- Slowly add dry ingredients to the wet mixture, stirring until combined.
- Gently fold in the cranberry mixture and chopped nuts until well integrated.
Baking
- Spread the batter evenly into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan before cutting into squares.
Notes
Serve warm or at room temperature, sprinkled with powdered sugar. Pairs well with whipped cream.
