Ingredients
  

For the cranberry mixture
  • 2 cups fresh cranberries
  • 1 cup sugar
For the batter
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a saucepan, combine fresh cranberries with sugar. Cook over medium heat, stirring gently until the berries begin to pop.
Mixing the batter
  1. In a bowl, cream together softened butter, brown sugar, eggs, and vanilla extract until light and fluffy.
  2. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Slowly add dry ingredients to the wet mixture, stirring until combined.
  4. Gently fold in the cranberry mixture and chopped nuts until well integrated.
Baking
  1. Spread the batter evenly into the prepared baking pan.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan before cutting into squares.

Notes

Serve warm or at room temperature, sprinkled with powdered sugar. Pairs well with whipped cream.
