Ingredients
  

Almond Sponge
  • 125 g Almond flour
  • 125 g Icing sugar
  • 150 g Whole eggs
  • 35 g All-purpose flour
  • 25 g Melted butter
  • 100 g Egg whites
  • 20 g Sugar
Raspberry Confit Insert
  • 250 g Raspberry purée
  • 60 g Sugar
  • 6 g Pectin NH
Crunchy Base
  • 100 g Milk chocolate
  • 100 g Praline paste
  • 80 g Feuilletine
Vanilla Mousse
  • 250 g Milk
  • 80 g Sugar
  • 80 g Egg yolks
  • 1 whole Vanilla bean Seeds scraped
  • 8 g Gelatin
  • 300 g Whipped cream
Vanilla Whipped Ganache
  • 200 g Cream (hot)
  • 150 g White chocolate
  • 300 g Cold cream
  • 1 whole Vanilla bean Seeds scraped
Ruby Glaze with Nut Texture
  • 200 g Ruby chocolate
  • 150 g Glaze base (neutral glaze)
  • 50 g Crushed nuts

Method
 

Almond Sponge
  1. Whip eggs, icing sugar, and almond flour together. Gently fold in the all-purpose flour and melted butter.
  2. In another bowl, whip the egg whites with sugar until soft peaks form, then fold this into the almond mixture.
  3. Spread the batter onto a baking tray and bake at 180°C for 10–12 minutes.
Raspberry Confit Insert
  1. In a saucepan, combine raspberry purée with sugar and pectin. Heat until it boils for one minute, then pour this into a mold to freeze until set.
Crunchy Base
  1. Melt the milk chocolate and mix it with praline paste and feuilletine. Spread a thin layer over the baked sponge and chill to set.
Vanilla Mousse
  1. Make an anglaise by heating the milk, egg yolks, sugar, and seeds from a vanilla bean until it reaches 82°C.
  2. Combine with gelatin and let it cool to about 30°C before folding in whipped cream.
Vanilla Whipped Ganache
  1. Pour the hot cream over the white chocolate and vanilla. Mix well, then add cold cream and chill overnight.
  2. Whip this mixture before using it as a topping.
Ruby Glaze
  1. Melt the ruby chocolate and mix it with the glaze base and crushed nuts, ensuring it’s at the perfect temperature of 32–34°C for glazing.
Assembly
  1. Line your mold with fluffy vanilla mousse, gently add the frozen raspberry confit, top with more mousse, and then place the sponge with the crunchy base.
  2. Freeze thoroughly before glazing with the vibrant ruby glaze and finishing with a swirl of the whipped ganache.

Notes

Make the raspberry confit ahead of time and store it in the freezer. Ensure all ingredients are at room temperature for the best results. Consider using different fruit purees for variations.
