Preparation
- Preheat your oven to 160 degrees C.
- Grease 8 mini pudding moulds and line the bottom with baking paper.
- In a bowl, combine half of the mixed fruit with boiling water and bicarbonate of soda. Let it soak for about 10 minutes.
- Blend the soaked fruit mixture with butter, brown sugar, eggs, and self-raising flour until combined.
- Gently fold in the remaining mixed fruit.
- Spoon the mixture into the prepared moulds.
Baking
- Bake the puddings for about 20 minutes or until golden.
Sauce Preparation
- In a saucepan over low heat, melt the butter, brown sugar, and cream, stirring until the mixture starts to bubble.
Serving
- Serve the warm puddings with a drizzle of the creamy sauce and a swirl of caramel sauce.
Notes
Leftover puddings can be stored in an airtight container in the fridge for 3-4 days. Reheat before serving.
