Mint Chocolate Mug Cakes

Ingredients
  

For the chocolate mixture
  • 1/2 cup white chocolate melts Used for the base of the mug cake
  • 300 ml thickened cream Divided into two parts, one for chocolate mixture and one for whipping
  • 1/8 tsp peppermint extract Adds mint flavor to the mixture
  • green food coloring To achieve the desired mint hue
For the layering
  • 8 pieces Choc Ripple biscuits For layering in the mug
  • 40 g Aero mint bar Chopped for garnish

Method
 

Preparing the chocolate mixture
  1. Place white chocolate melts and half a cup of cream into a heatproof bowl.
  2. Heat gently in a microwave, stirring every 30 seconds until smooth.
  3. Allow the mixture to cool in the refrigerator for two hours.
Whipping the cream
  1. Whip the remaining cream in a stand mixer or with handheld beaters until thick.
  2. Reserve a couple of tablespoons for garnish.
  3. Gently fold in the cooled white chocolate mixture until light and fluffy.
  4. Add peppermint extract and food coloring to reach an enticing mint hue.
Assembling the mug cakes
  1. Start with a dollop of the cream mixture at the bottom of a mug.
  2. Press a Choc Ripple biscuit into the cream, then repeat layering with three more biscuits and half of the cream mixture.
  3. Repeat the process in another cup.
  4. Top each mug with reserved whipped cream and refrigerate overnight.
Garnishing and serving
  1. Just before serving, chop the Aero mint bar and sprinkle it over the mug cakes.
  2. Serve elegantly, perhaps with a warm beverage or mint treats.

Notes

For a richer experience, drizzle melted dark chocolate on top. Consider using different mint chocolates or alternatives for a non-dairy version. Store in the refrigerator for up to three days.
