Preparation of the Crust
- Crush 32 mint Oreos until fine and combine with the melted butter, mixing until rich.
- Press the mixture into the bottom of a buttered 9x9 baking dish and refrigerate.
Cream Cheese Layer
- Beat softened cream cheese until smooth.
- Add powdered sugar and mix well.
- Fold in 1 cup of whipped topping and mint extract.
- Stir in green food coloring until evenly combined and spread over the crust.
- Return to the refrigerator to set.
Chocolate Pudding Layer
- In a bowl, whisk together cold milk, 1 cup of whipped topping, and instant chocolate pudding mix until thick.
- Spread this chocolate layer over the cream cheese layer and refrigerate for 2 hours.
Final Assembly
- Spread remaining whipped topping across the chocolate layer.
- Sprinkle with reserved crushed mint Oreos.
- Slice into 9 pieces and serve.
