Ingredients
  

Biscuit Cups
  • 24 pieces chocolate ripple biscuits These form the base of the biscuit cups.
Filling
  • 100 g Allens Minties Can be substituted with other mint candies.
  • 1/4 cup pouring cream Used to melt the mint candies.
  • 100 g white chocolate, broken into chunks Used for the filling and drizzling.
  • Green food coloring To achieve a minty green color in the filling.
  • 80 g white chocolate, melted and cooled For drizzling over the cups.
  • 80 g chocolate, melted and cooled For drizzling over the cups.

Method
 

Preparation
  1. Preheat the oven to 180C/160C fan forced.
  2. Place 1 biscuit, upside down, on the top of each hole of a 2 x 12 hole round-based shallow patty pan.
  3. Bake for 3-4 minutes or until the biscuits have softened.
  4. Working very quickly, use a teaspoon to shape the biscuits into cups using the pan as a guide.
  5. Once molded, cool for about 15 minutes.
Filling Preparation
  1. Place the chocolate in a heatproof bowl.
  2. Combine the Minties and cream in a small saucepan over medium-low heat. Cook, stirring constantly, for 5-6 minutes or until melted.
  3. Pour the melted mint and cream mixture over the chocolate, let it stand for 30 seconds, then stir until the chocolate melts and the mixture is smooth.
  4. Stir in a few drops of green food coloring until the desired hue is achieved.
  5. Refrigerate the mixture for 30 minutes, stirring occasionally, until cool.
  6. Use a small ziplock bag filled with the melted white chocolate and repeat the melting process with the milk chocolate.
Assembly
  1. Spoon generous amounts of the mint filling into the chocolate biscuit cups.
  2. Drizzle the cups with the melted white and milk chocolate for added delight.

Notes

Best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Keep the drizzles vibrant by serving chilled.
