Preparation
- In a mixing bowl, whip together mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the chilled heavy cream until firm peaks form.
- Gently fold the whipped cream into the mascarpone mixture until combined and airy.
- Pour the cooled strong coffee into a shallow dish for dipping.
Assembly
- Quickly dip each ladyfinger into the coffee and layer them at the bottom of serving cups.
- Scoop a layer of the mascarpone mixture over the ladyfingers.
- Repeat the layers of ladyfingers and mascarpone until the cups are filled, ending with mascarpone on top.
- Cover and refrigerate for at least 4 hours to chill.
Serving
- Before serving, dust the tops with cocoa powder and garnish as desired.
Notes
For added flavor, consider using coffee liqueur in the coffee dip. These cups can be made a day ahead to allow the flavors to meld beautifully.
