Ingredients
  

For the crust
  • 20 pieces Oreo cookies, finely crushed
  • 4 tablespoons unsalted butter, melted
For the cheesecake filling
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 10 pieces Oreo cookies, finely chopped
For the whipped cream topping
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 pieces mini or regular Oreo cookies (for garnish)
  • Extra Oreo crumbs (for garnish)

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a 12-cup muffin pan with paper liners.
  2. Mix the crushed Oreo cookies with melted butter until evenly moistened.
  3. Press about 2 tablespoons of the mixture into the bottom of each liner.
  4. Bake the crusts for 5 minutes, then let cool slightly.
Making the Filling
  1. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  2. Mix in the eggs one at a time, then add vanilla and sour cream.
  3. Fold in the chopped Oreo cookies.
  4. Divide the batter evenly among the crusts, filling each nearly to the top.
Baking
  1. Bake for 18–22 minutes, until the centers are just set.
  2. Cool completely, then refrigerate for at least 4 hours or overnight.
Topping
  1. Beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Pipe a swirl of whipped cream onto each mini Oreo cheesecake.
  3. Top with a whole Oreo cookie and a sprinkle of extra crumbs.

Notes

These mini cheesecakes can be stored in an airtight container in the fridge for up to five days. They can also be frozen for longer-lasting enjoyment—just remember to thaw them before serving.
