Method
The Dough Adventure
- In a large mixing bowl, whisk together flour, salt, and sugar. Add the cold, cubed butter and mix until it resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough holds together when pressed.
- Divide the dough into two, shape into discs, wrap in parchment, and chill for at least an hour.
The Filling Fiesta
- While your dough relaxes, peel, core, and slice your apples into thin pieces.
- Toss apples with lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch in a large bowl.
Rolling in the Dough
- Preheat your oven to 425°F (220°C). Roll out one disc on a floured surface until it's about 1/8 inch thick.
- Cut circles (about 4 inches in diameter) and press them into a greased muffin tin.
- Repeat for the second disc to create tops for the pies.
Fill ‘er Up
- Spoon apple filling into each crust and cut out smaller circles or fun shapes for the pie tops.
- Lay the tops over the apples, crimp edges with a fork, and make slits for steam to escape.
Golden Goodness
- Whisk the egg and brush it over the tops of the pies, then sprinkle with sugar.
- Bake in the oven for 20-25 minutes until golden brown.
Cool Down
- Let them cool slightly before serving.
Notes
