Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup salted butter, melted
  • 2 tbsp granulated sugar
Filling
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup sweetened flaked coconut
  • 0.25 cup fresh lemon juice
  • 1 can (20 oz) crushed pineapple, well drained
  • 1 can (11 oz) mandarin oranges, well drained
  • 1 cup chopped pecans
  • 1 container (8 oz) Cool Whip
  • to taste Maraschino cherries for garnish

Method
 

Preparation of Crust
  1. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until blended.
  2. Press the mixture into the bottom of a 9-inch pie dish and refrigerate.
Preparation of Filling
  1. In a large bowl, stir together sweetened condensed milk, fresh lemon juice, coconut, crushed pineapple, mandarin oranges, and chopped pecans until evenly mixed.
Fold in Cool Whip
  1. Gently fold in the Cool Whip until the mixture is smooth and fluffy.
Assemble the Pie
  1. Spoon the filling into the chilled crust and smooth the top.
  2. Garnish with maraschino cherries and extra pecans.
Chill and Serve
  1. Refrigerate for at least 4 hours, or overnight, before serving.

Notes

Make sure to drain the pineapple and mandarin oranges well to avoid excess moisture in your pie. For added flavor, toast the pecans before chopping them.
