Ingredients
  

Main Ingredients
  • 1.5 pounds chicken breasts, diced
  • 3 cups chicken broth
  • 1 15.25 ounce can black beans, drained and rinsed
  • 1 10 ounce can diced tomatoes and green chilis
  • 2 cups frozen corn
  • 1 16 ounce jar chunky salsa Use a chunky salsa with good texture
  • 1 ounce packet taco seasoning
  • 1 teaspoon salt Taste before adding as some salsas and broths may carry enough sodium
  • 1/4 cup chopped fresh cilantro Add at the end to keep its aroma bright
Optional Toppings
  • sour cream Optional for topping
  • cheddar cheese Optional for topping
  • jalapenos Optional for topping
  • corn chips Optional for topping
  • avocados Optional for topping

Method
 

Preparation
  1. Add all ingredients except for cilantro and toppings to a slow cooker; stir.
Cooking
  1. Cook on high for 4 hours.
  2. Stir in the cilantro and serve with toppings.
  3. Alternatively, cook on low heat for 6-8 hours, or stovetop on medium-high heat for 20-30 minutes until chicken is cooked through.

Notes

For a thicker soup, mash a few spoonfuls of beans against the side of the pot and stir them in. For a richer mouthfeel, stir in a spoonful of sour cream or a splash of crema just before serving.
