- Add all ingredients except for cilantro and toppings to a slow cooker; stir.
Cooking
- Cook on high for 4 hours.
- Stir in the cilantro and serve with toppings.
- Alternatively, cook on low heat for 6-8 hours, or stovetop on medium-high heat for 20-30 minutes until chicken is cooked through.
Notes
For a thicker soup, mash a few spoonfuls of beans against the side of the pot and stir them in. For a richer mouthfeel, stir in a spoonful of sour cream or a splash of crema just before serving.
