Ingredients
  

For the Cookies
  • 110 g butter, melted and cooled
  • 200 g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 200 g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon matcha powder
  • 1/2 teaspoon salt
For the Mascarpone Cream
  • 200 g mascarpone
  • 1 teaspoon vanilla extract (for the cream)
  • 75 g confectioners sugar
  • 20 g agave or honey
  • 120 g heavy cream
  • 1/2 teaspoon matcha powder (for dusting)

Method
 

Preparation
  1. Melt the butter and let it cool to room temperature.
  2. In a mixing bowl, combine granulated sugar and melted butter until smooth.
  3. Add the egg and vanilla extract, stirring until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, matcha powder, and salt.
  5. Fold the dry ingredients into the wet mixture gently until a dough forms.
  6. Scoop the dough onto a lined baking sheet, cover, and refrigerate for 30 minutes.
Baking
  1. Preheat the oven to 180°C (350°F).
  2. Bake the cookies for about 10-11 minutes until golden and firm around the edges.
  3. Allow the cookies to cool on a wire rack.
Making the Mascarpone Cream
  1. In a bowl, beat together mascarpone, vanilla extract, confectioners sugar, agave or honey, and heavy cream until fluffy and stiff peaks form.
  2. Chill the mascarpone cream in the fridge until ready to serve.
Assembly
  1. Pipe the mascarpone cream onto cooled cookies and dust with matcha powder.

Notes

Don’t rush the chilling time as it’s essential for the perfect cookie texture. You can adjust the sweetness of the mascarpone cream to your taste. For added texture, consider adding chocolate chips or nuts to the dough.
