Ingredients
  

Dough Ingredients
  • 4 cups all purpose flour
  • 2-4 tbsp sugar adjust to taste
  • 1 tbsp instant dry yeast
  • 1 tsp salt
  • 1 cup milk (lukewarm) do not exceed 110°F (43°C)
  • 2 tbsp honey
  • 1 pc egg
  • 3 tbsp butter (melted)
  • 2-3 tbsp oil
  • 1 tsp vanilla extract
  • 1 pc Zest of 1 orange or lemon for added flavor
  • 1 pc egg (for egg wash)
  • 1 tbsp milk (for egg wash)
Whipped Cream Ingredients
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)

Method
 

Prepare the Dough
  1. In a large bowl, mix flour, sugar, yeast, and salt.
  2. Add milk, honey, egg, vanilla, oil, butter, and citrus zest. Mix until a dough forms.
  3. Knead for about 8-10 minutes until smooth and elastic.
First Rise
  1. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Shape the Buns
  1. Divide the dough into equal portions (about 80g each). Shape into oval or round buns and place on a lined baking tray.
Second Rise
  1. Cover and let the buns rise again for 45-60 minutes until puffy.
Bake
  1. Preheat oven to 180 degrees C (350 degrees F).
  2. Brush buns with egg wash and bake for 15-18 minutes until golden brown.
  3. Allow to cool completely.
Prepare the Cream
  1. Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form.
Fill the Maritozzi
  1. Slice each bun lengthwise (without cutting completely).
  2. Pipe or spoon the whipped cream inside and smooth the surface.
  3. Dust with powdered sugar before serving.

Notes

For best results, chill the bowl and whisk for the whipped cream to reach stiff peaks more quickly. You can add a tablespoon of orange liqueur to the whipped cream for added flavor. Unfilled buns can be stored in an airtight container for two days or frozen for one month.
