Ingredients
  

For the Sweet Potato Purée
  • 4 large sweet potatoes, peeled and cubed About 2 kg
  • 4 tbsp unsalted butter, cubed
  • cup pure maple syrup
  • ¼ cup whole milk or almond milk Use almond milk for a dairy-free option.
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • Pinch allspice
  • Pinch sea salt
For the Pecan Crumble
  • cups raw pecans, finely chopped
  • ¼ cup pure maple syrup
  • ¼ cup light brown sugar
  • ¼ cup all-purpose flour Use almond flour for a gluten-free option.
  • 4 tbsp unsalted butter, melted
For Garnish
  • Micro herbs For garnish
  • Maple-glazed pecan halves For garnish
  • Thin maple sugar shards or caramelized maple tuile For garnish

Method
 

Roast the Sweet Potatoes
  1. Preheat the oven to 190 °C (375 °F). Spread the sweet potato cubes on a parchment-lined baking sheet.
  2. Roast for 45–60 minutes, tossing once halfway through, until soft and caramelized.
Make the Purée
  1. Transfer the roasted sweet potatoes to a large bowl or food processor.
  2. Add butter, maple syrup, milk, vanilla, cinnamon, nutmeg, allspice, and salt.
  3. Blend or mash until creamy and smooth.
Prepare the Crumble
  1. In a bowl, mix chopped pecans, maple syrup, brown sugar, flour, and melted butter.
  2. Stir until a sticky, crumbly mixture forms.
Assemble the Casserole
  1. Lightly grease a baking dish.
  2. Spread the sweet potato purée evenly, then sprinkle the crumble topping over the surface.
Bake
  1. Bake uncovered for 20–25 minutes, until the topping turns golden and crisp.
Garnish & Serve
  1. Garnish with micro herbs, maple-glazed pecans, and maple sugar shards.
  2. Serve warm to enjoy that perfect creamy-crunchy balance.

Notes

Store leftovers in an airtight container in the refrigerator. Reheat in the oven at 175 °C (350 °F) until warm throughout. Can also be frozen; let it cool completely before sealing in a freezer-safe container. Choose firm sweet potatoes for the best flavor and texture.
