  • 2 pieces ripe mangoes, peeled and diced Select mangoes that are slightly soft to the touch.
  • 2 cups green cabbage, finely shredded Shred as finely as possible for best texture.
  • 1 large carrot, grated Adds sweetness and color.
  • 1 piece red bell pepper, thinly sliced For crunch and sweetness.
  • 1/4 cup red onion, thinly sliced Adds a sharp flavor contrast.
  • 1/4 cup fresh cilantro, chopped Add last to avoid bruising.
Dressing ingredients
  • 3 tablespoons lime juice Freshly squeezed is recommended.
  • 2 tablespoons honey or maple syrup Adjust for sweetness to taste.
  • 1 tablespoon sesame oil For a nutty flavor.
  • to taste salt and pepper Season as desired.

Preparation
  1. In a large mixing bowl, combine the diced mangoes, shredded cabbage, grated carrot, sliced red bell pepper, sliced red onion, and chopped cilantro.
  2. In a separate small bowl, whisk together the lime juice, honey or maple syrup, sesame oil, salt, and pepper until well combined.
  3. Pour the dressing over the mango and vegetable mixture. Toss gently to coat everything evenly with the dressing.
  4. Let the slaw sit for about 5 to 10 minutes to allow the flavors to meld before serving.

Notes

This slaw serves well chilled or at room temperature. For best texture, store the dressing separately from the slaw if not serving immediately.
