Ingredients
  

For the Pudding
  • 2 tablespoons gelatin About 2 and a half packets
  • 1/4 cup sugar
  • 1 cup boiling water
  • 1 can evaporated milk 12oz/354ml
  • 2 cups mango pulp From a can; Kesar mangoes preferred
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. In a large bowl, combine gelatin and sugar. Pour in boiling water and stir until dissolved.
  2. Let the mixture sit for about 2 minutes to fully activate the gelatin.
  3. Add evaporated milk, mango pulp, and lemon juice into the bowl, whisking until smooth.
  4. Choose a serving container: pour into a bowl, small ramekins, or silicone molds.
  5. Cover with plastic wrap and refrigerate for at least 2 hours until set.
Serving
  1. Remove from fridge and serve chilled. Garnish with mint or grated coconut if desired.

Notes

For extra flavor, you can add vanilla extract to the mixture. Using ripe mango enhances the taste, but canned mango pulp is convenient. Watch the setting time as different fridges may take varying times.
