Preparation
- Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray; set aside.
- In a large, microwave-safe bowl, melt the butter.
- Add the flour, oats, sugars, and salt, and stir to combine.
- Set 1 heaping cup of the mixture aside and pack the rest into the prepared pan to form the crust.
Filling and Baking
- In another bowl, mix mango, sugar, lemon juice, and corn starch.
- Spread the mango mixture over the crust and sprinkle with the reserved crumble topping.
- Bake for about 50 minutes until edges are set.
- Cool for at least 1 hour before slicing.
Notes
Serve slightly warm with whipped cream, yogurt, or coconut cream. Store bars tightly wrapped at room temperature for 2 days, in the refrigerator for 5 days, or freeze for up to 2 months.
