Ingredients
  

Crust Ingredients
  • 200 g Digestive biscuits
  • 90 g Melted butter
Filling Ingredients
  • 400 g Cream cheese Ensure it is at room temperature.
  • 140 g Sugar
  • 200 ml Fresh cream
  • 450 g Mango puree Use ripe, sweet mangoes.
  • 15 g Gelatin (bloomed)
  • 1 tsp Vanilla Use vanilla extract.
Glaze Ingredients
  • 100 g Mango puree
  • 50 g Sugar
  • 15 g Gelatin (bloomed)

Method
 

Preparation
  1. Mix digestive biscuits with melted butter and press into a mold. Chill in the refrigerator until set.
  2. In a mixing bowl, whip cream cheese with sugar and vanilla extract. Add mango puree and mix well.
  3. Fold in whipped cream and melted gelatin into the mixture.
  4. Pour the cheesecake filling over the chilled biscuit base and allow to set in the refrigerator.
Glaze
  1. For the glaze, mix mango puree with sugar and bloomed gelatin, then pour it over the cheesecake.
  2. Chill again until the glaze is set.
Garnish
  1. Garnish with mango cubes, chocolate curls, and mint for a clean, professional look.

Notes

This cheesecake is best served chilled. Store leftovers in an airtight container in the refrigerator for about 3 days. Can also be frozen tightly to avoid freezer burn. Consider adding a sprinkle of cayenne for a spicy kick.
