Preparation
- Grease the base and sides of a 20cm x 30cm slice pan, line with baking paper.
- Combine the plain flour, desiccated coconut, caster sugar, and a pinch of salt in a bowl. Make a well in the center, pour in the melted butter, and mix until combined.
- Press the mixture into the prepared pan and chill until firm.
Cooking
- Preheat your oven to 190°C (170°C fan-forced). Bake the base for 15-20 minutes until golden brown.
- Allow it to cool slightly, then lower the oven temperature to 160°C (140°C fan-forced).
- Blend the cream cheese and lime zest until smooth in a stand mixer.
- Add sour cream, sugar, vanilla, and eggs, mixing until combined. Sift in the flour and mix briefly.
- Blend the mango with lime juice until smooth. Fold half of the puree into the cream cheese mixture.
- Pour the mixture over the cooled base, smoothing the surface, and dot with the remaining mango puree, swirling with a knife.
- Bake for 30-35 minutes until set but still with a slight wobble in the middle.
- Let it cool in the pan before transferring to the fridge to chill for 4-5 hours.
Notes
Ensure your cream cheese is at room temperature for a smoother texture. For extra flavor, consider adding coconut extract. These bars can also be frozen; just wrap tightly for future indulgence.
