  • 4 pieces eggs (separated, room temp) Use room temperature for better whipping.
  • 3/4 cup caster sugar Caster sugar dissolves more quickly.
  • 125 g melted butter
  • 1 tsp vanilla extract
  • 3/4 cup plain flour (sifted)
  • 2 cups lukewarm milk
  • 1/4 cup icing sugar (for dusting) For serving.

Preparation
  1. Preheat oven to 340°F (170°C) and line an 8-inch square pan.
  2. Whip egg whites to stiff peaks and set aside.
  3. Beat egg yolks with caster sugar until pale and fluffy.
  4. Mix in melted butter and vanilla, then gradually add sifted flour.
  5. Slowly add the lukewarm milk until the mixture is smooth.
  6. Gently fold in the whipped egg whites until combined.
Baking
  1. Pour the thin, slightly lumpy batter into the prepared pan.
  2. Bake for 35 to 60 minutes until a golden top forms.
Cooling and Serving
  1. Cool completely before dusting with icing sugar.
  2. Slice into modest squares and serve.

Notes

Oven temperatures vary, so check at 35 minutes and every 5–10 minutes thereafter. A slight jiggle is okay, and be sure to let cool completely for easier slicing.
