Method
 

Preparation
  1. In a charming little saucepan, combine sugar, corn syrup, and water.
  2. Stir gently over medium heat, ensuring the sugar dissolves.
  3. Bring the mixture to a boiling point and do not stir further.
Cooking
  1. Monitor the mixture with a candy thermometer and heat it to the hard crack stage (about 300°F).
  2. Remove from heat and stir in the flavor extract and a splash of food coloring.
  3. Pour the molten candy onto a greased baking sheet and spread it out.
  4. Allow it to cool completely before breaking it into pieces.
