Ingredients
  

Chocolate Crunch Base
  • 80 g dark chocolate Melted
  • 100 g feuilletine
Lotus Mousse
  • 200 g whipped cream
  • 120 g Lotus Biscoff spread
  • 4 g gelatin (bloomed) Make sure it's bloomed properly
Caramel Insert
  • 120 g sugar For caramel
  • 100 g warm cream
  • 30 g butter
  • 1 pinch salt
Glaze
  • 150 g Biscoff For decorating
  • 50 g cream

Method
 

Preparation
  1. Begin your adventure with the chocolate crunch base. Melt the dark chocolate and mix it with feuilletine, then spread this delightful concoction into the bottom of a cake mold and set it aside to cool.
  2. For the Lotus mousse, gently fold the luscious whipped cream into the silky Lotus Biscoff spread and the bloomed gelatin until it's smooth as a warm sunset. Pour it over your crunchy base and pop it in the fridge until set.
  3. Now onto the caramel insert: caramelize the sugar until it reaches a golden hue. Stir in warm cream, butter, and a pinch of salt until you achieve that velvety texture. Let it cool slightly, then pour this molten treasure over the mousse layer.
  4. For the final flourish, heat the Biscoff spread and cream until smooth. Once your dessert is frozen and firm, pour the glaze over it and smooth out the top.
  5. Decorate with crushed Biscoff biscuits, a sprinkle of nuts, and curls of chocolate to make it visually irresistible. Serve it chilled.

Notes

Keep any leftovers in an airtight container in the fridge for up to three days. For longer storage, you can freeze the dessert, but be sure to cover it well. A hint of vanilla in the whipped cream enhances the flavor beautifully.
