Ingredients
  

For the Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk
For the Filling
  • 1 cup cooked lobster meat, chopped
  • 1/4 cup green onions, chopped
  • 1 tablespoon lemon juice
  • 1/4 cup mayonnaise
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, sift together the flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and gradually add the milk, mixing gently until a soft dough forms.
  5. On a floured surface, roll out the dough to about 1/2 inch thick. Cut into circles or squares.
  6. In another bowl, combine the lobster meat, green onions, lemon juice, and mayonnaise. Season with salt and pepper.
Assembly
  1. Place a spoonful of the lobster mixture on half of the biscuit pieces. Top with the remaining biscuit pieces and press the edges together to seal.
Baking
  1. Bake in the preheated oven for 20-25 minutes until golden brown.

Notes

These biscuits are best enjoyed warm. Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in the oven.
