Preparation
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, sift together the flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese and gradually add the milk, mixing gently until a soft dough forms.
- On a floured surface, roll out the dough to about 1/2 inch thick. Cut into circles or squares.
- In another bowl, combine the lobster meat, green onions, lemon juice, and mayonnaise. Season with salt and pepper.
Assembly
- Place a spoonful of the lobster mixture on half of the biscuit pieces. Top with the remaining biscuit pieces and press the edges together to seal.
Baking
- Bake in the preheated oven for 20-25 minutes until golden brown.
Notes
These biscuits are best enjoyed warm. Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in the oven.
