Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (cut into 8 pieces) Use cold butter for the best texture.
For the filling
  • 1 ¼ cup granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs Ensure eggs are at room temperature.
  • 2 tsp lime zest Fresh zest for the best flavor.
  • cup fresh lime juice Freshly squeezed preferred.
  • 1 drop green (+ yellow) food coloring (optional) For a more vibrant color.

Method
 

Preparation of Crust
  1. Preheat your oven to 350°F (175°C) and lightly grease or line an 11x7-inch baking dish with parchment paper.
  2. In a food processor, combine flour, powdered sugar, salt, and butter. Pulse until the mixture resembles fine crumbs.
  3. Press the mixture firmly into the bottom of the prepared pan and bake for 18-20 minutes until golden brown.
Preparation of Filling
  1. In a bowl, whisk together granulated sugar and flour.
  2. Add eggs, one at a time, whisking well after each addition.
  3. Stir in lime zest, lime juice, and food coloring (if using) until smooth.
Baking
  1. Once the crust is golden, pour the filling over it and return to the oven for another 18-20 minutes, until the filling is set.
  2. Allow to cool completely in the pan for about an hour, then refrigerate for at least 1 to 2 hours before serving.
Serving
  1. Use the parchment paper to lift the bars out and cut into squares. Dust with powdered sugar before serving.

Notes

These bars are best served chilled. They can be enjoyed on their own or with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the refrigerator.
