For the filling
  • 1/2 cup lemon juice Freshly squeezed is recommended for the best flavor.
  • 1 tbsp lemon zest Ensure to zest only the outer yellow layer.
  • 1/2 cup sugar
  • 3 pieces eggs
  • 1/2 cup butter Use unsalted butter for making smooth filling.

Method
 

Preparation of the crust
  1. Gently crush the biscuits and blend with melted butter until they form a sandy texture.
  2. Press the mixture evenly into the tart pan and chill in the fridge for 15 minutes.
Preparation of the filling
  1. In a saucepan, whisk together eggs, sugar, lemon juice, and lemon zest.
  2. Cook the mixture over low heat, stirring until it thickens.
  3. Once thickened, stir in the butter until smooth.
Assembly and chilling
  1. Pour the filling into the chilled crust.
  2. Return to the fridge to set for 2 to 3 hours before serving.

Notes

For an even richer flavor, consider using homemade lemon juice. A pinch of salt in the filling amplifies the flavors. Avoid freezing the tart to maintain its texture.
