Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg, followed by the lemon juice, lemon zest, and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the butter and sugar mixture until just combined.
- Scoop tablespoon-sized portions of the dough and roll into balls, placing them on the prepared baking sheet with space in between.
Baking
- Bake in the preheated oven for 10 to 12 minutes, or until the edges turn golden.
- Allow the cookies to cool on the baking sheet for a moment before transferring to a wire rack to cool completely.
Glazing
- In a small bowl, combine the powdered sugar, lemon juice, and lemon zest until smooth.
- Once the cookies are cooled, drizzle the glaze over each cookie and allow it to set.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them. Consider adding a pinch of sea salt to the glaze for enhanced flavor.
