Cookie Dough

  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest

  • 1 teaspoon baking powder

Glaze
  • 1 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg, followed by the lemon juice, lemon zest, and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the butter and sugar mixture until just combined.
  6. Scoop tablespoon-sized portions of the dough and roll into balls, placing them on the prepared baking sheet with space in between.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes, or until the edges turn golden.
  2. Allow the cookies to cool on the baking sheet for a moment before transferring to a wire rack to cool completely.
Glazing
  1. In a small bowl, combine the powdered sugar, lemon juice, and lemon zest until smooth.
  2. Once the cookies are cooled, drizzle the glaze over each cookie and allow it to set.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate them. Consider adding a pinch of sea salt to the glaze for enhanced flavor.
