Preparation
- Grease a 9×9-inch baking pan or line it with parchment paper.
- Melt the butter in a large saucepan over low heat, then add the mini marshmallows. Stir gently until melted.
- Add the lemon zest and optional lemon extract, stirring to combine.
- Remove from heat and fold in the Rice Krispies cereal until fully coated.
- Using a buttered spatula or wax paper, press the mixture evenly into the prepared pan.
- Melt white chocolate chips in the microwave in 20-second intervals, stirring until smooth.
- Drizzle the melted chocolate over the bars and sprinkle with additional lemon zest or curls.
- Allow to cool for at least 30 minutes before cutting into squares.
Notes
Store the treats in an airtight container at room temperature for up to one week. Sifting Rice Krispies before mixing can help achieve an even coating. For an extra hint of flavor, consider adding lemon zest to the melting chocolate.
