Ingredients

  • 100 g sugar
  • 2 large egg yolks
  • 1 unit zest of 1 lemon
  • 1 unit juice of 1 lemon
  • 20 g cornstarch
  • 250 ml hot milk Do not boil.

Method
 

Preparation
  1. In a bowl, mix the egg yolks with the sugar until a smooth, slightly thick mixture forms.
  2. Incorporate the lemon zest, juice, and cornstarch, whisking until smooth.
  3. Gradually pour in the hot milk while whisking continuously.
Cooking
  1. Transfer the mixture to a saucepan and heat on medium, stirring constantly until it thickens.
  2. Once thickened, remove from heat and transfer to a clean container.
  3. Press plastic wrap against the surface to avoid crusting, and chill in the refrigerator until completely cold.

Notes

Store in an airtight container in the fridge for up to three days. For extra flavor, consider vanilla or lavender. Strain through a fine sieve for a smoother finish.
