Preparation
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- In a spacious bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the cornstarch, all-purpose flour, lemon zest, fresh lemon juice, vanilla extract, and salt; blend until a soft dough forms.
- Roll the dough into small balls (approximately 1 inch in diameter) and place them on the prepared baking sheet.
- Gently flatten each ball with the back of a fork or your fingers.
Baking
- Bake in the preheated oven for 10-12 minutes until the edges start to turn golden.
- Let cookies cool on the baking sheet for a few moments before moving them to a wire rack to cool completely.
- Once cooled, dust the cookies generously with powdered sugar.
Notes
These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them with parchment paper in between layers.
