  • 1 cup unsalted butter, softened Allow to soften at room temperature.
  • 1/4 cup powdered sugar Plus extra for dusting.
  • 1/4 cup cornstarch
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 whole zest of lemon For heightened flavor, consider adding more zest.
  • 1 tablespoon fresh lemon juice Can add lemon extract for more flavor.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt Omit if using salted butter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a spacious bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the cornstarch, all-purpose flour, lemon zest, fresh lemon juice, vanilla extract, and salt; blend until a soft dough forms.
  4. Roll the dough into small balls (approximately 1 inch in diameter) and place them on the prepared baking sheet.
  5. Gently flatten each ball with the back of a fork or your fingers.
Baking
  1. Bake in the preheated oven for 10-12 minutes until the edges start to turn golden.
  2. Let cookies cool on the baking sheet for a few moments before moving them to a wire rack to cool completely.
  3. Once cooled, dust the cookies generously with powdered sugar.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. For longer storage, freeze them with parchment paper in between layers.
