  • 2 cups milk Whole milk is preferred for creaminess.
  • 1/2 cup sugar Adjust sweetness to taste.
  • 3 tablespoons cornstarch Thickening agent.
  • 1/4 teaspoon salt Enhances flavor.
  • 1 teaspoon vanilla extract For additional flavor.
  • 1 lemon Juice and zest of 1 lemon Use fresh for the best flavor.
  • 3 egg yolks egg yolks For richness and color.

Method
 

Preparation
  1. In a saucepan, whisk together the sugar, cornstarch, and salt until uniform.
  2. Gradually pour in the milk, stirring to combine until smooth.
  3. Heat over medium heat, stirring constantly until the mixture thickens and begins to bubble.
  4. Lower the heat and add the lemon juice, zest, and egg yolks, whisking until well combined.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the custard into serving dishes and let cool, then refrigerate to set.

Notes

Serve chilled topped with fresh berries or a sprinkle of lemon zest. Experiment with flavors such as coconut milk or cardamom.
