  • 2-3 tablespoons maple syrup (or honey, to taste) Adjust based on desired sweetness.
  • 1/2 teaspoon vanilla extract For a hint of warmth.
  • 1/4 cup Greek yogurt or coconut cream (optional) Adds extra creaminess.

Preparation
  1. In a medium-sized bowl, whisk together almond milk, fresh lemon juice, lemon zest, maple syrup, and vanilla extract until well combined.
  2. Stir in the chia seeds, ensuring they’re evenly distributed.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to let the chia seeds absorb the liquid.
  4. After chilling, stir the pudding to break any clumps and mix in Greek yogurt or coconut cream if using.
Serving
  1. Spoon the pudding into serving dishes and garnish with additional lemon zest or fresh berries.

Notes

Store in the fridge for up to five days; stir before serving for best texture. For variations, try mixing in other citrus fruits or flavors like matcha or peanut butter.
