Ingredients
  

For the tart shells
  • 250 g Butternut Snap cookies To form the tart crusts
For the filling
  • 250 g cream cheese Softened for mixing
  • 1/2 cup condensed milk To sweeten the filling
  • 85 g lemon jelly To provide the lemon flavor
  • Lemon rind To garnish before serving

Method
 

Preparation
  1. Combine the jelly crystals with 1 cup of boiling water. Stir until the gelatin is fully dissolved, then refrigerate until it's cool and just starting to set.
  2. Preheat your oven to 180°C (350°F).
  3. Place the Butternut Snap cookies into the holes of two 12-cup patty pan trays. Bake for 8 to 10 minutes until softened.
  4. Remove from the oven and gently push the softened cookies into the patty pans to form rounded tart cases. Allow them to cool completely.
Filling Preparation
  1. Using hand-held beaters, beat the cream cheese and condensed milk together until smooth.
  2. Gradually add the cooled jelly to the mixture and mix until fully combined.
  3. Pour the mixture into the cooled cookie shells and refrigerate until set, around 2-3 hours.
Serving
  1. Once the tarts are set, serve them chilled, garnished with lemon rind.

Notes

Store any leftovers in an airtight container in the fridge for a couple of days, although it’s best to enjoy them the same day for optimal texture and flavor. Consider adding lemon zest to the filling for extra flavor, or switch the jelly flavor for a variety.
