Lemon Cream and Orange Ladyfingers

Ingredients
  

For the lemon cream
  • 400 ml milk
  • 1 piece zest of 1 lemon Freshly grated
  • 1 teaspoon vanilla sugar
  • 2 pieces egg yolks
  • 40 g sugar
  • 15 g cornstarch
  • 1 piece juice of 1 lemon
  • 100 g condensed milk
For the orange layer
  • 100 g ricotta Full-fat recommended
  • 120 ml whipped cream
  • 2 pieces juice of 2 oranges Freshly squeezed
For assembly
  • Ladyfingers Ladyfingers Quantity as needed
  • 35 g coffee For soaking
  • 100 g sugar
  • 140 ml cold water
  • Cinnamon, cocoa or chocolate for decoration
  • Chocolate for decoration

Method
 

Preparation of milk
  1. In a saucepan, heat the milk with the lemon zest and vanilla sugar until it boils.
Preparation of the cream
  1. In a bowl, beat the yolks with the sugar and cornstarch.
  2. Add the egg yolk mixture to the hot milk, stirring continuously until the cream thickens.
  3. Let it cool.
Preparation of the lemon mixture
  1. Once the cream has cooled, add the lemon juice and condensed milk, whisking until thickened.
Decoration and cooling (first pass)
  1. Decorate with cinnamon, cocoa or chocolate.
  2. Place in the refrigerator for 30 minutes before serving.
Preparation of coffee
  1. Mix the coffee with the sugar and cold water, beating until thickened.
Preparation of the cream (ricotta layer)
  1. In a bowl, mix the ricotta, condensed milk and whipped cream until you get a smooth cream.
  2. Add the orange juice and mix well.
Assembly of desserts
  1. On an ovenproof dish, place a layer of Ladyfingers.
  2. Pour the cream over the Ladyfingers, leveling well.
  3. Repeat with a second layer of Ladyfingers and cream, if necessary.
Decoration and cooling (final)
  1. Decorate with grated chocolate.
  2. Place in the refrigerator for 30 minutes before serving.

Notes

Serve chilled with a scatter of fresh orange zest and a dusting of cocoa or cinnamon for contrast. For a street‑food vibe, offer espresso shots on the side.
