  • 21 oz cod fillets Use fresh cod for best results.
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, crushed
  • 2 tbsp olive oil
  • 1 tbsp fresh ginger, grated
  • 1.2 cups coconut milk (full-fat) Full-fat is recommended for creaminess.
  • 1 large lemon (juice and zest) Zest for added flavor.

Method
 

Preparation
  1. Preheat your oven to 180 degrees C (350 degrees F).
  2. Season the cod fillets with salt and pepper to taste.
  3. In a large skillet, heat olive oil over medium heat, add onion and sauté until translucent.
  4. Stir in ginger and garlic, cooking for an additional minute.
  5. Pour in coconut milk and bring to a gentle simmer.
  6. Add lemon zest and juice, stirring to combine.
Baking
  1. Place seasoned cod in a baking dish.
  2. Pour sauce over cod, and bake for 20-25 minutes until cooked through.

Notes

Serve the cod with the sauce drizzled over, garnished with torn cilantro or Thai basil and lemon wedges. Accompany with steamed jasmine rice, coconut rice, or crusty bread.
