Lamb Chops with Shrimp Alfredo and Broccolini

Ingredients
  

For the Lamb Chops
  • 4 chops lamb chops
  • to taste Salt and freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh rosemary or thyme, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter For basting
For the Pasta and Sauce
  • 10 oz fettuccine pasta
  • 8 to 10 large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese Use freshly grated for best results
  • to taste Salt and black pepper
  • to taste Fresh parsley, chopped For garnish
For the Broccolini
  • 1 bunch broccolini
  • 1 tablespoon olive oil
  • to taste Salt

Method
 

Preparation
  1. Season lamb chops with salt, pepper, garlic powder, and chopped herbs. Let rest at room temperature.
Cooking the Lamb Chops
  1. Heat olive oil in a skillet. Sear lamb chops for 3 to 4 minutes per side. Add butter, baste, and set aside to rest.
Cooking the Pasta
  1. Cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
Making the Alfredo Sauce
  1. In a skillet, melt butter. Sauté garlic until fragrant, add shrimp and cook until pink.
  2. Pour in heavy cream and simmer. Stir in Parmesan until smooth. Add pasta and toss to coat, loosening with pasta water as needed. Season and finish with parsley.
Cooking the Broccolini
  1. Sauté broccolini in olive oil until tender crisp and lightly charred. Season with salt.
Serving
  1. Plate Alfredo pasta, lamb chops, and broccolini. Serve hot with garnish of parsley and pepper.

Notes

For a different flavor, swap broccolini for asparagus, add red pepper flakes to the Alfredo, or use lemon zest before serving. Store leftovers in airtight containers and reheat gently on the stove.
