Preparation
- Preheat your oven to 200°C.
- In a mixing bowl, beat the softened butter with the sugar until creamy and light.
- Add ground almonds, eggs, vanilla, and optional rum; mix until combined.
- Lay one puff pastry sheet on a baking sheet or cake pan.
- Spread almond cream over, leaving a 2 cm border.
- Dampen the edges lightly with water.
- Place the second puff pastry sheet on top and seal the edges.
- Brush the surface with egg yolk.
Baking
- Bake for 25 to 30 minutes until golden brown.
- Allow it to cool slightly before serving.
Notes
Wrap leftover King Cake in foil or store in an airtight container for a couple of days at room temperature. Consider adding extra sugar on top before baking if you want a caramelized sweetness.
