Ingredients
  

For the almond cream filling
  • 125 g ground almonds
  • 100 g sugar
  • 100 g softened unsalted butter Make sure butter is at room temperature.
  • 2 whole eggs
  • 1 yolk egg For brushing the top.
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum Optional, for extra flavor.
  • 1 pinch salt
For assembly and serving
  • 2 sheets puff pastry Make sure they are thawed if using frozen.
  • Powdered sugar optional For dusting before serving.

Method
 

Preparation
  1. Preheat your oven to 200°C.
  2. In a mixing bowl, beat the softened butter with the sugar until creamy and light.
  3. Add ground almonds, eggs, vanilla, and optional rum; mix until combined.
  4. Lay one puff pastry sheet on a baking sheet or cake pan.
  5. Spread almond cream over, leaving a 2 cm border.
  6. Dampen the edges lightly with water.
  7. Place the second puff pastry sheet on top and seal the edges.
  8. Brush the surface with egg yolk.
Baking
  1. Bake for 25 to 30 minutes until golden brown.
  2. Allow it to cool slightly before serving.

Notes

Wrap leftover King Cake in foil or store in an airtight container for a couple of days at room temperature. Consider adding extra sugar on top before baking if you want a caramelized sweetness.
