Ingredients
  

Dry Ingredients
  • 2 tablespoons almond flour Measure by spooning and leveling, avoid packing.
  • 1 tablespoon coconut flour
  • 1 tablespoon granulated sweetener Can use erythritol or monk-fruit blend.
  • 1/4 teaspoon baking powder
Wet Ingredients
  • 1 medium egg Use room temperature.
  • 1 tablespoon butter Melted, but not hot.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, stir together the dry ingredients: almond flour, coconut flour, baking powder, and sweetener, breaking up any lumps.
  2. In another bowl, whisk the egg with a fork, then add the melted butter and vanilla extract, whisking until combined.
  3. Add the dry ingredients to the wet ingredients and stir until a smooth batter forms.
Cooking
  1. Grease a mug or ramekin with butter and fill it with the batter.
  2. Microwave for 80 seconds at 900W.
  3. Enjoy straight from the mug or invert onto a plate.

Notes

Serve warm with unsweetened whipped cream, toasted almond slivers, or raspberries for added texture and flavor. Store leftovers wrapped tightly; consume within 2 days and reheat gently.
