Preparation
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the julienned bell peppers and thinly sliced onions to the skillet. Sauté for 8 to 10 minutes until softened and caramelized.
- Season with garlic powder, sea salt, and cracked black pepper, then remove from heat and let rest.
- Preheat your oven's broiler to high and line a baking sheet with parchment paper or aluminum foil.
Assembly
- On a clean work surface, lay out the roast beef slices, overlapping if necessary.
- Place one slice of provolone cheese atop each beef slice.
- Distribute the sautéed vegetables evenly across the center of each cheese-covered beef slice.
- Roll the beef tightly around the fillings and place seam-side down on the prepared baking sheet.
Broiling
- Slide the baking sheet under the broiler for 1 to 2 minutes or until the cheese is bubbly and golden.
Serving
- Serve immediately, preferably with horseradish aioli or sugar-free ketchup.
Notes
For extra flavor, marinate the beef slices or add sliced jalapeños for spice. Store leftovers in an airtight container in the fridge for up to three days. Roll-ups can be frozen for up to two months.
