  • 2 tbsp butter Use unsalted butter for a neutral flavor.
  • 2/3 cup natural chunky peanut butter Can substitute with almond or cashew butter.
  • 1 cup unsweetened shredded coconut
  • 1 tbsp cocoa powder Use unsweetened cocoa powder.
  • 4 drops liquid vanilla stevia Or your favorite liquid sweetener.

Method
 

Preparation
  1. Grab a microwave-safe bowl and melt the butter.
  2. Stir in the chunky peanut butter and cocoa powder until smooth.
  3. Add in the shredded coconut and liquid stevia; mix until well combined.
  4. Scoop out the mixture and drop it onto a parchment-lined sheet pan.
  5. Freeze for about 15 minutes until set.
  6. Once chilled, separate the cookies using the parchment paper underneath them.
  7. Store in a sealed container or bag in your fridge.

Notes

These cookies can be served with herbal tea or coffee. Store in an airtight container in the fridge for up to a week. They freeze well; just separate with parchment paper.
