- Grab a microwave-safe bowl and melt the butter.
- Stir in the chunky peanut butter and cocoa powder until smooth.
- Add in the shredded coconut and liquid stevia; mix until well combined.
- Scoop out the mixture and drop it onto a parchment-lined sheet pan.
- Freeze for about 15 minutes until set.
- Once chilled, separate the cookies using the parchment paper underneath them.
- Store in a sealed container or bag in your fridge.
Notes
These cookies can be served with herbal tea or coffee. Store in an airtight container in the fridge for up to a week. They freeze well; just separate with parchment paper.
