For the Pie
  • 1 crust keto graham cracker crust Store-bought or homemade
  • 2 batches keto lemon curd Use your preferred recipe
For the Meringue
  • 2 large egg whites At room temperature for best results
  • 1/2 cup sugar-free powdered sugar Adjust based on sweetness preference
  • 1/4 teaspoon cream of tartar Optional, helps stabilise meringue

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Prepare your keto graham cracker crust and lemon curd according to your preferred recipe.
  3. Fill the crust with lemon curd until it is 2/3 full.
Making the Meringue
  1. In a large mixing bowl, beat the egg whites until stiff peaks form.
  2. Gradually whisk in the powdered sugar and cream of tartar until thick and fluffy.
  3. Spread the meringue gently over the pie.
Baking
  1. Bake the pie in the oven for 5-7 minutes or until the meringue is golden brown.

Notes

Serve with whipped cream or a sprinkle of lemon zest for added flavor. Store leftovers in an airtight container in the fridge for best taste within three days. The meringue may lose its fluff quickly.
