  • 3 large large eggs
  • 2 cups heavy cream
  • 1/4 cup allulose or monk fruit sweetener Adjust based on desired sweetness.
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Grease four ovenproof ramekins and place them inside a large baking dish.
  3. In a mixing bowl, whisk together eggs, heavy cream, sweetener, and vanilla extract until smooth.
  4. Divide the mixture evenly among the prepared ramekins.
Baking
  1. Boil water in a kettle and pour enough boiling water into the baking dish until ramekins are cradled beneath an inch of water.
  2. Slide the baking dish into the oven and bake for about 30 minutes until custard is set.
Serving
  1. Enjoy warm, or cool in the refrigerator before serving.
  2. Serve in the ramekins, optionally topped with cinnamon or berries.

Notes

Ensure eggs are at room temperature for a smoother custard. Experiment with different sweeteners and flavors like citrus zest or spices for variation.
