Ingredients
  

For the cookies
  • 1.5 cups blanched almond flour
  • 0.25 cups coconut flour
  • 0.5 cups powdered sugar-free sweetener
  • 0.75 tsp baking powder
  • 0.25 tsp salt
  • 6 tbsp unsalted butter, softened
  • 2 large eggs Use room temperature for better emulsification.
  • 0.5 tsp vanilla extract
For the frosting
  • 0.25 cups unsalted or salted butter, softened
  • 0.5 cups powdered sugar-free sweetener Sift if necessary.
  • 0.125 tsp natural pink food coloring powder Optional.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Line a cookie sheet with parchment paper.
  2. In a large bowl, combine all dry cookie ingredients.
  3. Add softened butter, eggs, and vanilla extract, then stir until a dough forms.
  4. Allow the dough to rest for 1-2 minutes to thicken.
  5. Form dough into 12 balls. Place on the cookie sheet, smoothing and flattening each ball slightly.
Baking
  1. Bake for 8-10 minutes until the edges are set and the centers are soft.
  2. Allow the cookies to cool.
Frosting
  1. To make the frosting, combine softened butter and powdered sweetener. Mix until smooth.
  2. Add food coloring to reach the desired shade.
  3. Spread frosting on cooled cookies.

Notes

Store frosted cookies in a single layer in an airtight container in the fridge for up to 5 days. For longer storage, freeze unfrosted cookies.
